Macuja combines classic French finesse with tropical inspiration. His Goose Liver and Chicken Parfait is silky, rich, and beautifully complemented by sweet-spiced papaya chutney, crisp rye crostini, and a drizzle of chili-balsamic reduction \u2014 an elegant balance of texture, contrast, and depth.<\/p>\n<hr data-start=\"1392\" data-end=\"1397\" \/>\n<h3 data-start=\"1399\" data-end=\"1416\">Ingredients<\/h3>\n<p data-start=\"1418\" data-end=\"1644\"><strong data-start=\"1418\" data-end=\"1455\">Chicken Liver Parfait (serves 10)<\/strong><br data-start=\"1455\" data-end=\"1458\" \/>\u00bd green apple<br data-start=\"1471\" data-end=\"1474\" \/>20 g butter<br data-start=\"1485\" data-end=\"1488\" \/>Orange zest<br data-start=\"1499\" data-end=\"1502\" \/>Thyme<br data-start=\"1507\" data-end=\"1510\" \/>Rosemary<br data-start=\"1518\" data-end=\"1521\" \/>100 ml red wine<br data-start=\"1536\" data-end=\"1539\" \/>Ginger<br data-start=\"1545\" data-end=\"1548\" \/>200 g chicken liver<br data-start=\"1567\" data-end=\"1570\" \/>150 g goose liver<br data-start=\"1587\" data-end=\"1590\" \/>250 ml cream<br data-start=\"1602\" data-end=\"1605\" \/>300 g melted butter<br data-start=\"1624\" data-end=\"1627\" \/>2 eggs<br data-start=\"1633\" data-end=\"1636\" \/>Nutmeg<\/p>\n<p data-start=\"1646\" data-end=\"1875\"><strong data-start=\"1646\" data-end=\"1675\">Papaya Chutney (serves 8)<\/strong><br data-start=\"1675\" data-end=\"1678\" \/>1 tsp chili sauce<br data-start=\"1695\" data-end=\"1698\" \/>1 tsp Tabasco<br data-start=\"1711\" data-end=\"1714\" \/>\u00bd onion, finely diced<br data-start=\"1735\" data-end=\"1738\" \/>\u00bc papaya, peeled and cubed<br data-start=\"1764\" data-end=\"1767\" \/>\u00bd red pepper<br data-start=\"1779\" data-end=\"1782\" \/>200 g honey<br data-start=\"1793\" data-end=\"1796\" \/>\u00bd cup red wine vinegar<br data-start=\"1818\" data-end=\"1821\" \/>\u00bc cup ginger, cubed<br data-start=\"1840\" data-end=\"1843\" \/>1 clove garlic, chopped<br data-start=\"1866\" data-end=\"1869\" \/>Salt<\/p>\n<p data-start=\"1877\" data-end=\"1941\"><strong data-start=\"1877\" data-end=\"1899\">Rye Bread Crostini<\/strong><br data-start=\"1899\" data-end=\"1902\" \/>5 slices rye toast bread<br data-start=\"1926\" data-end=\"1929\" \/>Walnut oil<\/p>\n<p data-start=\"1943\" data-end=\"2012\"><strong data-start=\"1943\" data-end=\"1983\">Foie Gras (per portion approx. 50 g)<\/strong><br data-start=\"1983\" data-end=\"1986\" \/>Salt and pepper<br data-start=\"2001\" data-end=\"2004\" \/>Brandy<\/p>\n<hr data-start=\"2014\" data-end=\"2019\" \/>\n<h3 data-start=\"2021\" data-end=\"2033\">Method<\/h3>\n<p data-start=\"2035\" data-end=\"2394\"><strong data-start=\"2035\" data-end=\"2060\">Chicken Liver Parfait<\/strong><br data-start=\"2060\" data-end=\"2063\" \/>Saut\u00e9 ginger and apple in butter with thyme, rosemary, and orange zest. Deglaze with red wine and reduce. Add chicken and goose liver, then transfer to a food processor. Blend while adding melted butter, eggs, cream, and nutmeg. Pass through a fine sieve, pour into dariole moulds, and bake at 100\u00b0C for 50 minutes. Chill to set.<\/p>\n<p data-start=\"2396\" data-end=\"2534\"><strong data-start=\"2396\" data-end=\"2414\">Papaya Chutney<\/strong><br data-start=\"2414\" data-end=\"2417\" \/>Combine all ingredients in a saucepan and simmer gently until thick and glossy. Adjust seasoning and allow to cool.<\/p>\n<p data-start=\"2536\" data-end=\"2646\"><strong data-start=\"2536\" data-end=\"2552\">Rye Crostini<\/strong><br data-start=\"2552\" data-end=\"2555\" \/>Cut rye toast into rounds, brush with walnut oil, and bake slowly until golden and crisp.<\/p>\n<p data-start=\"2648\" data-end=\"2762\"><strong data-start=\"2648\" data-end=\"2661\">Foie Gras<\/strong><br data-start=\"2661\" data-end=\"2664\" \/>Season foie gras with salt and pepper, sear on both sides until golden, and deglaze with brandy.<\/p>\n<p data-start=\"2764\" data-end=\"3000\"><strong data-start=\"2764\" data-end=\"2779\">To Assemble<\/strong><br data-start=\"2779\" data-end=\"2782\" \/>Unmould the parfait onto an oval plate. Arrange papaya chutney and crostini alongside, then top with seared foie gras.
