Crispy-skinned fish meets earthy shiitake bacon ragout, bright arugula pesto, and a delicate whole-grain mustard emulsion \u2014 a true showcase of coastal sophistication and modern technique.<\/p>\n<hr data-start=\"1243\" data-end=\"1248\" \/>\n<h3 data-start=\"1250\" data-end=\"1267\">Ingredients<\/h3>\n<p data-start=\"1269\" data-end=\"1374\"><strong data-start=\"1269\" data-end=\"1285\">For the Fish<\/strong><br data-start=\"1285\" data-end=\"1288\" \/>2 white snapper fillets (165 g each, skin-on)<br data-start=\"1333\" data-end=\"1336\" \/>Salt to taste<br data-start=\"1349\" data-end=\"1352\" \/>2 tbsp grapeseed oil<\/p>\n<p data-start=\"1376\" data-end=\"1549\"><strong data-start=\"1376\" data-end=\"1404\">For the Mustard Emulsion<\/strong><br data-start=\"1404\" data-end=\"1407\" \/>Juice of 1 lemon<br data-start=\"1423\" data-end=\"1426\" \/>Juice of \u00bd orange<br data-start=\"1443\" data-end=\"1446\" \/>1\u00bd tsp honey<br data-start=\"1458\" data-end=\"1461\" \/>2 tbsp whole grain mustard<br data-start=\"1487\" data-end=\"1490\" \/>1 egg yolk<br data-start=\"1500\" data-end=\"1503\" \/>\u00be cup extra virgin olive oil<br data-start=\"1531\" data-end=\"1534\" \/>Salt to taste<\/p>\n<p data-start=\"1551\" data-end=\"1763\"><strong data-start=\"1551\" data-end=\"1578\">For the Mushroom Ragout<\/strong><br data-start=\"1578\" data-end=\"1581\" \/>200 g fresh shiitake mushrooms, thinly sliced<br data-start=\"1626\" data-end=\"1629\" \/>4 strips quality bacon, finely chopped<br data-start=\"1667\" data-end=\"1670\" \/>\u00bd stalk leek, thinly sliced<br data-start=\"1697\" data-end=\"1700\" \/>3 garlic cloves, crushed (peel-on)<br data-start=\"1734\" data-end=\"1737\" \/>Salt and pepper to taste<\/p>\n<p data-start=\"1765\" data-end=\"1916\"><strong data-start=\"1765\" data-end=\"1790\">For the Arugula Pesto<\/strong><br data-start=\"1790\" data-end=\"1793\" \/>\u00bd cup milk<br data-start=\"1803\" data-end=\"1806\" \/>2 garlic cloves, peeled<br data-start=\"1829\" data-end=\"1832\" \/>175 g wild arugula<br data-start=\"1850\" data-end=\"1853\" \/>Extra virgin olive oil<br data-start=\"1875\" data-end=\"1878\" \/>Lemon juice to taste<br data-start=\"1898\" data-end=\"1901\" \/>Salt to taste<\/p>\n<hr data-start=\"1918\" data-end=\"1923\" \/>\n<h3 data-start=\"1925\" data-end=\"1937\">Method<\/h3>\n<p data-start=\"1939\" data-end=\"2099\"><strong data-start=\"1939\" data-end=\"1947\">Fish<\/strong><br data-start=\"1947\" data-end=\"1950\" \/>Season snapper with salt. Pan-sear skin-side down in grapeseed oil until crisp. Transfer to a 230\u00b0C oven for 6\u20137 minutes until just cooked through.<\/p>\n<p data-start=\"2101\" data-end=\"2283\"><strong data-start=\"2101\" data-end=\"2121\">Mustard Emulsion<\/strong><br data-start=\"2121\" data-end=\"2124\" \/>Whisk all ingredients except olive oil in a bowl. Slowly drizzle in olive oil while whisking until the sauce thickens to a smooth emulsion. Adjust seasoning.<\/p>\n<p data-start=\"2285\" data-end=\"2584\"><strong data-start=\"2285\" data-end=\"2304\">Mushroom Ragout<\/strong><br data-start=\"2304\" data-end=\"2307\" \/>Render bacon over medium heat until crispy. Reserve half the fat in the pan and remove bacon to paper towel. Add leek and garlic, cook until soft. Add shiitake and saut\u00e9 until tender. Remove garlic, add a splash of chicken stock or cream if desired, return bacon, and season.<\/p>\n<p data-start=\"2586\" data-end=\"2850\"><strong data-start=\"2586\" data-end=\"2603\">Arugula Pesto<\/strong><br data-start=\"2603\" data-end=\"2606\" \/>Simmer garlic in milk until soft; discard milk. Poach arugula in salted boiling water for 1 minute, shock in ice water, then drain and press dry. Blend arugula and garlic, drizzling in olive oil until smooth. Finish with lemon juice and salt.<\/p>\n<hr data-start=\"2852\" data-end=\"2857\" \/>\n<h3 data-start=\"2859\" data-end=\"2873\">To Plate<\/h3>\n<p data-start=\"2875\" data-end=\"3060\">Spoon mushroom ragout onto the plate. Place the snapper skin-side up on top. Drizzle mustard emulsion outward from the fish and finish with a line of arugula pesto.
