Guinness Pie

Ingredients
1 kg boneless beef, cut into small cubes
1 large onion, roughly chopped
1 carrot, chopped coarsely
3 potatoes, each cut into 6 pieces
2 garlic cloves, minced
2 tbsp tomato paste
1 cup beef broth
1 cup Guinness
1 tbsp Worcestershire sauce
3 thyme sprigs
Flour for dusting
Salt and pepper to taste
Method
Pat the beef dry, season with salt and pepper, dust with flour, and brown in a heavy ovenproof pot in batches. Transfer beef to a bowl.
Fry onion and garlic until softened, then stir in tomato paste and cook for 2 minutes. Add broth, Guinness, potatoes, carrots, and thyme. Bring to a gentle boil. Cover and transfer to a 175°C preheated oven for about 90 minutes, until beef is tender.
Cool slightly and remove the thyme. Transfer the filling into bowls, top with puff pastry, and brush with egg wash. Bake for 20 minutes, or until golden.
