Chef Sirijit Jaiyen shares this signature seafood dish — golden-fried prawns tossed in garlic, pepper, and colorful sweet peppers — a comforting classic that brings together the warmth of home cooking with the freshness of local ingredients.


Ingredients

½ kg prawns
1 red sweet pepper
1 yellow sweet pepper
5–10 garlic cloves (to taste)
1 scallion (green or spring onion)


Seasoning

1 tbsp oyster sauce
1 tsp soy sauce
1 tsp sugar
Vegetable oil
Tempura flour


Preparation

  1. Wash and drain the prawns. Lightly coat with tempura flour and deep fry until the skins open and turn crisp.

  2. Finely chop the sweet peppers, garlic, and scallions, and pan-fry until fragrant.

  3. Add the fried prawns and stir-fry briefly with the seasoning sauces.

  4. Serve hot with Thai jasmine rice.
