Guinness Pie

in Patong. A hearty recipe that captures the essence of Irish hospitality in Phuket.

Ingredients

1 kg boneless beef, cut into small cubes
1 large onion, roughly chopped
1 carrot, chopped coarsely
3 potatoes, each cut into 6 pieces
2 garlic cloves, minced
2 tbsp tomato paste
1 cup beef broth
1 cup Guinness
1 tbsp Worcestershire sauce
3 thyme sprigs
Flour for dusting
Salt and pepper to taste

Method

Pat the beef dry, season with salt and pepper, dust with flour, and brown in a heavy ovenproof pot in batches. Transfer beef to a bowl.

Fry onion and garlic until softened, then stir in tomato paste and cook for 2 minutes. Add broth, Guinness, potatoes, carrots, and thyme. Bring to a gentle boil. Cover and transfer to a 175°C preheated oven for about 90 minutes, until beef is tender.

Cool slightly and remove the thyme. Transfer the filling into bowls, top with puff pastry, and brush with egg wash. Bake for 20 minutes, or until golden.

Chef Paul Orr was born in Malta and raised in Canada. A graduate of the Southern Alberta Institute of Technology, he began his career at Aldo’s Cucina in California, followed by Savoir Fare in Vancouver, where he rose to Executive Chef. He later worked at Sparkling Hill Resort and Spa under a three-star Michelin-trained chef before moving to Thailand.

After time in Hua Hin at Springfield Royal Country Club and Anantasila Resort, he joined the Phuket dining scene. Today, Chef Paul leads the kitchen at Irish Times Pub in Jungceylon — serving authentic Irish comfort food with a touch of culinary precision.
