Baluchi Restaurant brings the warmth of North India to Phuket with Chef Kamal Singh’s Mutton Rogan Josh. This rich, slow-cooked curry combines tender mutton, fragrant spices, and creamy yoghurt for a dish that’s both comforting and deeply flavourful — a true taste of tradition refined with care.


Ingredients

300 g mutton
½ cup yoghurt
½ cup tomato purée
3 onions, chopped
3 tbsp oil
1 tbsp ginger paste
1 tbsp garlic paste
1 tbsp coriander powder
½ tbsp turmeric powder
1 tbsp cumin powder
½ tbsp black pepper
1 tsp Kashmiri chili powder
½ tbsp cinnamon powder
½ tsp garam masala
3 cloves
3 green cardamoms
2 bay leaves
Chopped coriander for garnish


Method

Heat oil in a deep pan and add cloves, cardamoms, bay leaves, and a pinch of garam masala. Add onions and sauté until golden brown.

Add mutton and brown on high heat. Stir in ginger and garlic paste, then add coriander, chili, cumin, and turmeric powders. Cook over medium heat until aromatic.

Add tomato purée and sauté well. Pour in 3 cups of water, cover, and simmer until the mutton is tender.

Whisk yoghurt and add to the curry, followed by cinnamon and remaining garam masala. Simmer briefly, then remove from heat. Garnish with fresh coriander before serving.

Serve hot with naan or basmati rice.
